Building a Better Chocolate Milk

The Problem

Cocoa powder brings the rich chocolate flavor consumers love, but it also introduces bitterness that sugar typically masks. When sugar was reduced in early prototypes, the bitterness became more pronounced and the flavor profile lost balance.

The Solution

We reworked the formulation to reduce bitterness at the source, allowing Oobli sweet proteins to deliver clean sweetness without compromising chocolate flavor.
