Recipe: Low-Sugar Raspberry Truffles

What’s more satisfying than a rich, creamy chocolate truffle? One so good, you’ll want to eat the whole batch. Good news… with our version, you can.

These decadent bites are made with Oobli chocolate, protein-sweetened and crafted with the cleanest ingredients to deliver all the sweetness you love, without the negative health effects of sugar. We’ve added freeze-dried raspberries for a subtle tart pop, shredded coconut for texture, and creamy nut butter to bring it all together. They’re indulgent, satisfying, and totally snackable.

Ingredients:

  • 1 bar Oobli Razzle Dazzle Dark Chocolate

  • 1 cup freeze-dried raspberries + more for topping

  • ½ cup unsweetened shredded coconut

  • ⅓ cup almond or cashew butter

  • 1 tsp coconut oil 

Directions:

  • In a food processor, combine the freeze-dried raspberries, shredded coconut and almond or cashew butter. Blend until a dough forms.

  • Taking about ½ tbsp of the mixture at a time, press together and roll into a ball. Place on a parchment lined cutting board or plate. (Repeat step 2 until dough is gone).

  • In a bowl, combine Razzle Dazzle chocolate and coconut oil. Microwave in 30 second intervals, mixing in between, until chocolate is melted.

  • Drizzle chocolate over each raspberry truffle or you can also roll each truffle into the chocolate to coat it completely.

  • Top truffles with crushed freeze-dried raspberry and place in the fridge for about 10-15 minutes to set the chocolate.

  • Keep stored in the fridge and enjoy!
