Recipe: Low-Sugar Matcha Chia Pudding

Start your day (or treat yourself any time) with this delicious and nutritious Matcha Chia Pudding. Combining the earthy, antioxidant-rich flavor of Japanese matcha with the creamy texture of chia pudding, this recipe is as nourishing as it is satisfying. A layer of rich Oobli chocolate adds a decadent, breakable top that contrasts beautifully with the bright green pudding beneath, making each spoonful a feast for the senses.

Packed with protein, fiber and healthy fats, it’s an easy-to-make option for breakfast, a snack or even a guilt-free dessert.

Ingredients:

  • ½ bar Oobli Crisp ‘n Rice

  • 1 tsp matcha powder

  • 3 tbsp chia seeds

  • 3/4 cup plain greek yogurt

  • 1/2 cup unsweetened almond or coconut milk

  • 1 tbsp maple syrup

Directions:

  1. Mix the matcha with about 1-2 tbsp hot water. Set aside.

  2. In a container, combine chia seeds, yogurt, milk, maple syrup and the matcha. Mix well. Let sit in the fridge for 10 minutes and then mix again to make sure the chia seeds are evenly distributed.

  3. Return to the fridge and let sit overnight.

  4. Place Oobli chocolate in a small bowl and microwave 30 seconds at a time until fully melted.

  5. Pour over chia pudding to create a chocolate shell. Let sit a few minutes in the fridge to harden before enjoying!
